This pop-up dinner series is a collaboration of the food truck Taco de Paco, the Tin Roof brewery, and blogger Jay Ducote (biteandbooze.com). Each of the five courses for this beer dinner is broken down into three features. For example, the fourth course, called "Crawfish Trinity," promises an open-faced crawfish pie with corn and potato aioli; a bacon-wrapped crawfish and smoked gouda stuffed poblano pepper; and crawfish etouffée arancini with green onion crema and reduced hot sauce.
