Louisiana Cooking Classes at NOCCA
NOCCA 2800 Chartres Street, New Orleans, Louisiana
NOCCA alumni and chefs Sierra Torres and Grace Treffinger offer six classes that delve into the different eco-regions of the Gulf South, education about the land, its people, and each other through cooking. Each class is $100, but if you register for all six, you'll receive a $75 discount. Must be 18 and older. See class schedule below:
August 10—Meats: Grazing Pastures of Southeast, featuring braised lamb shank in red wine and local vegetables, homemade pasta carbonara with tasso, and fresh market vegetable salad
August 17—Seafood: Understanding Watersheds and the Mouth of the Mississippi, featuring seafood gumbo, crawfish gnocchi, and shrimp salad.
August 24—Grains: Prairies and Upriver Valleys of Grain, featuring homemade sourdough loaf with local butter, dent corn spoonbread, butter pecan cinnamon rolls, herbed focaccia.
September 7—Preservation and Canning: Fruit Fields of the Mississippi Delta, featuring peach and blueberry jams, pepper jelly, sweet or dill pickles, and tomato sauce.
September 14—Summer Sweets: Desserts of the South, featuring strawberry shortcake, sweet biscuit with macerated strawberries and vanilla bean whipped cream, peach hand pies, chocolate bread pudding, and bourbon ice cream with praline crumble.
September 21—Hands in the Soil: Garden Day & Outdoor Cooking, featuring grilled shrimp skewers, whole grilled fish stuffed with lemon and herbs, and a garden salad.
