Boston Salad

Makes 4 servings

Ingredients:

1 head Boston or bibb lettuce 
1/3 cup roasted walnuts 
1/3 cup sliced hearts of palm
1/3 cup crumbled blue cheese 
½ cup honey scallion dressing  

Honey Scallion Dressing:
Makes about 1 cup

1 egg
1 bunch scallions chopped, greens only
1 tablespoon honey
1 tablespoon lemon juice
½ cup peanut or canola oil 
Salt and pepper to taste

Method:
  1. Place egg and the next three ingredients in a food processor and purée. Add oil slowly until a light mayonnaise forms. Season to taste.
  2. Toss ½ cup of dressing gently with the lettuce leaves and other salad ingredients and serve immediately.
