Crème Brûlée

A beloved dessert from the menu of Redemption restaurant. 

  1. Mix egg yolks and sugar on high until it is a light yellow color.
  2. Heat cream over medium just until it starts to bubble.
  3. Add vanilla bean to cream and let cool to room temp (75°).
  4. Combine the cream, yolk mixture, and salt.
  5. Divide mixture into 12 shallow ramekins.
  6. Bake at 325° for 25 minutes. Cool and refrigerate.
