Roasted Root Vegetables

Ingredients:

2 pounds of a mix of root vegetables (sold by Fullness Farm at the Red Stick Farmers Market)
1 onion 
3-5 whole peeled garlic cloves 
olive oil 
salt and pepper

Method:

  1. Preheat oven to 400°F. Cut all the vegetables into about the same size, so they will cook evenly, about 1-inch cubes.
  2. Toss the cut vegetables and peeled garlic cloves with olive oil until coated well.
  3. Season generously with salt and pepper.
  4. Roast in oven for about 45 minutes, turning occasionally. They should be tender and brown when finished.
