Garlic Lemon Oil

Ingredients:
2 lemons
12 garlic cloves, peeled
2 cups olive oil
1+1/2 teaspoons crushed red pepper flakes
salt and pepper (to taste)

Method:
  1. In a medium saucepan, combine olive oil and garlic cloves. Bring to a boil and then reduce to a simmer for ten minutes.
  2. Meanwhile, carve the peel from the lemons, taking care to exclude the bitter white pith.
  3. Add lemon peel to the oil, stirring to combine. Remove from heat and add red pepper flakes. Let mixture infuse while cooling to room temperature. Season with salt and pepper.
  4. Transfer to a large glass jar and refrigerator (can be funneled into small bottles later.
