Garlic Lemon Oil
Ingredients:
2 lemons
12 garlic cloves, peeled
2 cups olive oil
1+1/2 teaspoons crushed red pepper flakes
salt and pepper (to taste)
Method:
- In a medium saucepan, combine olive oil and garlic cloves. Bring to a boil and then reduce to a simmer for ten minutes.
- Meanwhile, carve the peel from the lemons, taking care to exclude the bitter white pith.
- Add lemon peel to the oil, stirring to combine. Remove from heat and add red pepper flakes. Let mixture infuse while cooling to room temperature. Season with salt and pepper.
- Transfer to a large glass jar and refrigerator (can be funneled into small bottles later.
