Mizado Chorizo Taco Tradicional

Yield: four tacos 

Ingredients: 

4 corn tortillas (griddled) 
1 cup Chorizo Taco Mix (see recipe below) 
¼ cup Cilantro-Onion-Radish mix (see recipe below) 
1 oz of your favorite habanero salsa 

Method:
  1. Portion ¼ cup of Chorizo Taco Mix onto each tortilla. 
  2. Evenly distribute cilantro-onion-mix on each taco.
  3. Drizzle salsa on each taco.

 

Chorizo Taco Mix 

Ingredients: 

½ oz oil 
½ oz raw chorizo 
½ cup boiled and diced potatoes 
½ cup diced white onion 

Method: 

  1. Heat oil in sauté pan. Place chorizo on pool of oil and flatten to ¼ inch thick using the spatula. 
  2. Allow to cook until the underside is browned. 
  3. Flip the chorizo over. Place the potatoes and grilled onions on top of the chorizo. Cook just until the sausage is evenly browned. 
  4. Break up the chorizo and potatoes into pieces no larger than ¾ inch. Ensure that the ingredients are evenly distributed. 

 

Cilantro-Onion-Radish Mix 

Ingredients: 

¼ cup chopped cilantro 
¼ cup diced radish (1/8-inch dice) 
¼ cup diced white onion (¼-inch dice) 

 

Method:

Mix well.
