A zesty mayo recipe that accompanies MoPho’s crispy fried oysters recipe, found here. try it on a sandwich! 

Yield: 1 cup

Ingredients:

1 cup mayonnaise                                 
1/2 tbsp. fermented red pepper paste
1/2 tbsp. rice wine vinegar                                               
1/2 tsp. fish sauce                                   
1 clove garlic, minced 

Method: 
Combine all ingredients. Chill at least one hour to marry flavors.
