Slick Rick’s Famous Chicken Salad

4-6 boneless skinless chicken breasts

3-5 tbsp. olive oil

¼ cup Red Spice (from Rick’s line of spices)

¼ - ½ cup diced red bell peppers

¼ - ½ cup diced celery

½ - 1 cup mayonnaise

2-4 tbsp. Creole Mustard

Salt and pepper to taste

In a pan, mix the chicken, olive oil, and Red Spice until chicken is well coated. Grill the chicken and allow to cool completely. After the chicken has cooled, do a small to medium dice. Mix all remaining ingredients in a mixing bowl, and adjust seasoning with Red Spice and salt and pepper. Refrigerate.
