Three Melon Gazpacho

Makes 8 servings

Ingredients:

2 cups cantaloupe, cubed and seeded
2 cups honeydew, cubed and seeded
 4 cups medium watermelon, cubed and seeded
1 red bell pepper, seeded and large diced
1 green bell pepper, seeded and large diced
1 yellow bell pepper, seeded and large diced
1 Creole tomato, cut in quarters
4 lemons, juiced
1 lime, juiced
1/4 cup fresh ginger, grated
Crystal Hot Sauce to taste
salt and pepper to taste
splash of cane vinegar or apple cider vinegar
1/4 cup basil, chopped
crab-boiled shrimp (optional)

Method:

Combine all but the last 4 ingredients in a blender and puree until smooth. Season to taste with hot sauce, cane vinegar, salt and pepper. For a smoother soup, you can strain through a fine colander, but not necessary. Serve cold; garnish with fresh chopped basil. Top with crab-boiled shrimp, if desired.
