Recipe: Chicken Blueberry Salad
A sweet twist on your summer chicken salad

2 lbs. Chicken Breasts, poached and cooled
1 Lemon's Juice
½ Cup Yogurt
5 Oz. Fresh blueberries
2 Sweet Peppers, diced
1 Leek, thinly sliced (white and light green parts only)
Salt and pepper, to taste
Directions
Method: Dice chicken breasts. Combine with other ingredients in one larger mixing bowl, stirring until all ingredients are coated with yogurt. Serve on lettuce leaves or bread.
