Recipe: Classic Pesto
Fresh and flavorful, a favorite element from Chef Alex Diaz's toolbox
1 Cup Toasted Pine Nuts
½ Cup Roasted Garlic
½ Cup Raw Garlic
¼ lb. Basil
1 Cup Extra Virgin Olive Oil
1 Lemon (Zest and Juice)
½ Cup Parmesan
Salt and Pepper, to taste
Directions
Purée all ingredients until semi smooth. Serve atop pasta, in dips, on pizza or toasted bread, on salad, roasted vegetables, meat, or anyway you please.
