“Mmm, ça c’est bon!” enthuses Isaac Toups, whose dirty rice recipe, culinary mastery, and disdain for people who don’t cook hold the spotlight in a video titled “In the Kitchen With: Isaac Toups.” The beautifully-shot film was featured in the November 19 installment of Tasting Table, a daily email publication aimed at adventurous eaters and foodies countrywide.
Toups, along with wife Amanda, owns the eponymous Toups’ Meatery in New Orleans’ Mid-City. In the Tasting Table video, he touts his Cajun heritage and innate love of cooking; and while his dirty rice (served at the restaurant alongside pork chops) may not qualify as “adventurous” for most Country Roads readers, the close-up visuals of Toups’ darkening roux, splashing beer, and swirling pan are worth two minutes of your time.
With tradition misplaced (or perhaps tossed aside), dirty rice just invited itself to your holiday table.
