In a 26 oz. Hurricane glass, mix:
- 1 oz. fresh lemon juice
- 4 oz. dark rum
- 4 oz. passionfruit syrup*
- crushed ice
- orange slice
- 1 Maraschino cherry
Method: In a cocktail shaker, add lemon juice, rum, passionfruit syrup, and crushed ice; shake vigorously for 1 to 2 minutes and then strain into a tall glass or hurricane glass. Garnish with an orange slice and a maraschino cherry. Makes 1 serving.
* Passionfruit Syrup Recipe
- 32 oz bottled passionfruit juice
- 3/4-1 lb. sugar
Method: Simmer juice slowly over low heat. Reduce by one-third and add sugar, stirring carefully so the hot juice doesn't splash. Make sure all the sugar dissolves. Shut off stove. Cool slightly and pour into a sterilized bottle. (Boil bottle for 15 minutes). Add 4 oz. of white rum as a preservative, shake, cool, store in the refrigerator.
