Crème Brûlée

12 12 oz. Egg yolk
6 Oz. Sugar
3 pints Heavy Cream
1 Madagascar Vanilla Bean
¾ Tsp. Salt
A beloved dessert from the menu of Redemption restaurant.
- Mix egg yolks and sugar on high until it is a light yellow color.
- Heat cream over medium just until it starts to bubble.
- Add vanilla bean to cream and let cool to room temp (75°).
- Combine the cream, yolk mixture, and salt.
- Divide mixture into 12 shallow ramekins.
- Bake at 325° for 25 minutes. Cool and refrigerate.
