Recipe: Skillet Green Beans with Almonds
A perfect side dish, snack, or sneaky way to get your greens in

¼ Cup Almonds, sliced or slivered
2 Tbsp. Olive Oil
1 Small onion, diced
2 Cloves garlic, minced
12 Oz. Green beans, trimmed
½ Tsp. Lemon pepper
¼ Tsp. Garlic powder
2 Tbsp. Soy Sauce
¼ Cup Water
Salt, to taste
Directions:
- Add the almonds to a frying pan and set over medium heat. Toast the almonds in the pan, stirring them constantly to prevent burning. Once the almonds are browned (after about 1–2 minutes), remove them from the pan and set them aside.
- Return the pan to the stove, add the olive oil, and set to medium heat. Add the onion and sauté until soft and translucent, about 5 minutes. Then, add the garlic and sauté for one minute more.
- Add the green beans, lemon pepper, black pepper, and garlic powder and stir together. Sauté together for 2 minutes, and then add the soy sauce and water.
- Cover the pan and allow to cook over the low heat for five minutes. After five minutes, taste one of the green beans. If it is still too firm, add two more tablespoons of water to the pan, return the cover, and let simmer for 2–3 more minutes. Once finished, sprinkle with salt, if desired.
- Transfer the green beans to a serving dish and top with the toasted almonds.
