Gonzales, the self-proclaimed "Jambalaya Capital of the World," will host a festival dedicated to your favorite regional meat and rice concoction (and surely, around here, there are plenty). The event is free to the public and features a jamba-cooking contest, carnival rides, and live music by Ryan Foret & Foret Tradition, Gregg Martinez, The Mojoes, and more. Free. Friday bands play from 5:30 pm–midnight, Saturday bands play from 11 am–midnight, and Sunday bands play from noon–11 pm. Full schedule at jambalayafestival.net.
