Boudin
This is, in our estimation, one in a list of thirty marvelous places, flavors, events, and experiences that anyone who lives in—or loves—our part of the world should experience at least once in his or her lifetime.
Like fingerprints, no two boudin links are quite the same. From Krotz Springs—where four boudin specialty shops rub shoulders along the same stretch of highway—to pork-sausage temples such as Bergeron’s in Port Allen, The Best Stop in Scott, Poché’s in Breaux Bridge, or Bourgeois’ Meat Market in Thibodaux, each link favors its maker with subtly different ratios of spice/rice/meat/seafood/liver/whatever. This, my friends, is subjective stuff, compelling the serious connoisseur to consider the options side-by-side.
How better, then, to spend a Saturday, than by chunking a cooler in the trunk and going in search of your own personal boudin best? You’ll spend a fine day on the back roads between the green Cajun prairie and the wide sky. At every stop, look for the steamer on the counter; buy a link, then savor it in the parking lot perched on the hood of your car. It tastes best that way.
