Ingredients:
For the batter:
1 cup Amish Friendship Bread Starter
(recipe follows)
3 eggs
1 cup oil
1/2 cup milk
1 cup sugar
1/2 tsp. vanilla
2 tsp. cinnamon
1+1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
2 cups flour
1–2 small boxes instant pudding
(any flavor)
For the cinnamon sugar mixture:
1/2 cup sugar
1/2 tsp. cinnamon
Method:
- Preheat oven to 325º F. In a large mixing bowl, combine all the ingredients for the batter, stirring with a wooden spoon.
- Grease two loaf pans, then sprinkle bottom and sides with cinnamon sugar mixture.
- Pour batter in loaf pans, then sprinkle more cinnamon sugar on top.
- Bake for one hour, or until toothpick inserted in loaf comes out clean.
- Let cool, then serve.
Amish Friendship Bread Starter
Yield: 4–7 cups
Ingredients:
1, .25-oz. package active dry yeast
1/4 cup warm water
1 cup milk
1 cup flour
1 cup sugar
Method:
- Dissolve yeast in. a small bowl of water. Let stand for 10 minutes.
- In a large ceramic bowl, combine 1 cup flour and 1 cup sugar. Whisk together thoroughly.
- Add 1 cup milk and yeast mixture, slowly stirring to combine.
- Cover loosely and store in safe place at room temperature. Over the next ten days, do the following: Day 2: Stir. Day 3: Stir. Day 4: Stir. Day 5: Stir. Day 6: Add 1+1/2 cup milk, 1+1/2 cup flour, and 1+1/2 cup sugar. Stir. Day 7: Stir. Day 8: Stir. Day 9: Stir. Day 10: Divide starter into Ziploc bags (1 cup to each bag). Store in refrigerator or freezer, or use to make bread immediately.
