5 oz. ciabatta rolls
Basil Pesto (Click here for recipe)
Fresh Mozzarella thinly sliced
Roma Tomatoes thinly sliced
Salt & Pepper freshly ground
Olive Oil
Preheat Panini Grill 375 degrees. Thinly slice the dome top off the ciabatta bread, then slice ciabatta through the middle to make two equal sandwich slices. Spread the bottom half of the ciabatta with Basil Pesto and cover bread with Tomatoes and Salt & pepper to taste. Cover tomatoes with the thin sliced mozzarella. Close the sandwich drizzle Olive oil on top. Place on the grill for approximately three minutes. Remove from grill and slice down the center and return it to the grill for another two minutes. Garnish and serve.
